Why does red wine get all credit for having the highest healthy resveratrol content when they both can be made from the same grapes?

The secret is in the skin. In the production of white wine the skins are removed early on while red wine fermentation uses the skins to obtain full body and best of all, high resveratrol content. We commonly associate resveratrol with grapes and wine although it is present in other plants such as mulberries, peanuts, eucalyptus, spruce and lilies. The highest known concentration of resveratrol is in the skin of the grapes.

Why is Resveratrol important?In nature, resveratrol functions as part of a plant's defensive arsenal. It protects the like of the plant by defending it against infections and UV radiation. For example, grapevine fungal infections are more common in cooler climates and grapes grown in cooler climates have a higher concentration of resveratrol to protect themselves.
